Hello everyone! My name is Rachel Willner and I’m the AmeriCorps VISTA: Food For All Coordinator here at Okanogan County Community Action Council (OCCAC). I’ve accepted The Challenge and I’d like to share a little bit about my first day!
My strategy was to plan my menu for the entire week and buy everything on the first day of The Challenge. So, yesterday I went to Safeway and realized just how little $29.56 would buy. I have a habit of eating lots of fresh fruit, drinking a cup of tea every morning, and eating Japanese soba noodles…
I have to refrain from some of these for the week…
I ended up buying 2 different types of dried beans, brown rice, a carton of 18 eggs, a block of cheddar cheese, a container of plain yogurt, 5 bagels, bananas, broccoli, red potatoes, and one each of a peach, pear, apple, grapefruit, avocado, nectarine, and navel orange. All of that, without my beloved tea and soba noodles, came to $28.65 WITH my Safeway Card. Oh, and some of this stuff was on sale on top of that!!! My Safeway card saved me $2.56, which means that I would have gone over my weekly limit by $1.65 without it.
Now, the plan is to eat a bagel, ½ cup yogurt, 2 eggs, a banana, a second fruit, some cheese, and beans and rice with either potatoes or broccoli for the entire week. The beans are in the crock pot and the rice is in the rice cooker. Let’s do this!
